Wfpb cauliflower queso

This spicy and delicious wfpb cauliflower-based queso is perfect for dipping or pouring over french fries, baked potatoes, or taco bowls. And the best part is it's super easy to make!


Ingredients

  • 2 cups cooked cauliflower

  • 1/2 red pepper (roughly chopped)

  • 1/3 cup red onion (roughly chopped)

  • 2 garlic cloves

  • 1/4 cup raw almonds (soaked in boiling water for 1/2 hour)

  • 2 tbsp almond butter

  • 2 tbsp apple cider vinegar

  • 2 tbsp nutritional yeast

  • 1 tsp sea salt

  • 1 tsp cumin

  • 1/2 tsp turmeric

  • 1/4 tsp cayenne

  • Juice from 1/2 lemon

  • 1/4 cup water

Instructions

  1. Combine all ingredients in a blender and blend until smooth. Serve warm or cold. That's it--enjoy!
